We were fortunate to be in Hong Kong where they know how to usher in the New Year with a bang! Tonight a  magnificent spectacle of more than  30,000 computer-controlled  pyrotechnic shells were fired from barges in the harbour.

Good bye Year of the Tiger – welcome Year of the Rabbit.

The fireworks were sponsored by the Hong Kong Hainan Commercial Association and lasted over 23 minutes with 8 different scenes. Multiple rabbit shaped fireworks were featured, along with the numbers 2011, and smiling faces.

The Rabbit is the fourth sign of the Chinese Zodiac consisting of 12 animal signs. The Rabbit is regarded as a lucky sign. According to tradition people born in the Year of the Rabbit are reasonably friendly individuals who enjoy the company of a group of good friends. They are good teachers, counselors and communicators, but also need their own space.

Also according to Chinese tradition the Rabbit brings a year in which you can catch your breath and calm your nerves. It is regarded as a time for negotiation. To gain the greatest benefits from this time, focus on home, family and security. One should make it a goal to create a safe, peaceful lifestyle, so you will be able to deal calmly with any problems.

Cookie Dough Truffle Recipe…

  • 1/2 cup butter, softened
  • 3/4 cup brown sugar, packed
  • 1 teaspoon vanilla
  • 2 cups flour, all purpose
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup mini chocolate chips (note below)
  • 1/2 cup walnuts, chopped (optional)
  • Chocolate Almond Bark or melting chocolate
  • Pink and Red Wilton Candy Melts (optional)
  • Sprinkles (optional)


In a large bowl, cream butter and brown sugar until fluffy, beat in vanilla. Gradually add the flour, alternating with the milk. Stir in chocolate chips and nuts. Using a cookie dough scoop, drop dough onto waxed paper and place in fridge for about 1 hour.

Remove from fridge and roll into balls. Place back into fridge for about 1 hour. Melt Chocolate, dip balls, coating evenly. Drizzle with melted Pink or Red Chocolate and add sprinkles if desired.
